Cookery book review: 'Sea Fare: A Chef's Journey Across the Ocean'

Every yachtie has shuddered to themselves when the well-meaning, inquisitive friend or family member says: “So, I hear you work on a cruise ship?” And now, finally, there is a book to assist you when you are faced with the befuddled look of someone who just doesn’t understand!
Victoria Allman was one of the lucky ones. She discovered her passion for food and cooking right out of high school, and her passion for the yachting industry was soon to follow. She received her culinary degree from the Culinary Institute of America and earned her stripes as sous chef at Calgary’s famed River Café. While she was there, she developed a passion for cooking with fresh, local ingredients when the local food movement was just in its infancy. But her lust for adventure and her desire to see the world meant she wouldn’t be staying in Calgary for long. Fortunately, for the guests of the yachts she cooked aboard, she brought a passion for local fare with her when she hit the high seas. Along with her love of cooking and adventure, Allman also brought with her a love of writing. She has just released her first book, Sea Fare: A Chef’s Journey Across the Ocean (Norlights Press, 2009). In Sea Fare, Allman takes readers on a fantastic voyage from the snowy mountains of Canada to the cool blue seas of the Caribbean, the rice paddies of Vietnam, and the plains of Africa, all the while painting a delicious picture of the ingredients and food she discovered along the way that continue to inspire the dishes she cooks up for guests and crew today.
Allman lifts the veil of secrecy on the yacht world, giving landlubbers a glimpse into a life few could hardly imagine; from the thrill of seeing dolphins at the bow for the first time to enduring agonisingly picky guests; as well as stories that could only happen to a superyacht chef, like receiving a gift of a turtle while in the Cayman Islands – and actually having to cook it; to shrimping off of the coast of Savannah. Sea Fare serves up a plate full of enthralling stories and delectable recipes (none for turtle soup, thankfully!), giving readers a taste of what it’s like to stand in the flip-flops of a megayacht chef, in all of its exotic and harrowing glory. Allman’s book is a great read to add to your reading list for your next crossing, and the perfect book for those family members who just don’t understand the world in which we yachties live.
