What makes a good bar tender?

Having recently returned from Antibes where I sampled the delights of Triple S's new bar tending course I have come back filled with enthusiasm for the skills involved in professional bar tending and believe that every yacht should have fully trained bar tenders on the interior staff.

So what makes a good bar tender and why should interior staff be trained in the art of bar tending?

It seems obvious that when an owner or charter guest, who is paying $500,000 for a weeks charter, asks for a drink it should be made with flair and speed. When general service levels are so high, a bar that is ill stocked or an ill trained bar tender who has to look up cocktail recipes should not let the side down.

Misja Vorstermans, from the Bartender Network and Fabulous Shaker Boys explained, "It's not about how the bar looks it's about the atmosphere and service." An extremely experienced bartender, Vorstermans combines his love of teaching with his bar tending skills for a comprehensive course that leaves no stone unturned.

There are several deadly sins a bar tender should never make:
  • The should never serve drinks in dirty glasses. ie with lipstick around the rim.
  • Have their back to the guest when they enter the bar.
  • Run a dirty bar.
  • Be unfriendly and uncommunicative.
A good barman should:

  • Be a host, an entertainer even a mediator for the guests.
  • Should be able to up sale. (although this is more relevant in a bar than on a yacht)
  • Should be able to advise and make drink suggestions to guests. 
  • Make drinks on the front of the bar so that the guests can see what is going in the cocktail.
  • Recognise the balance between sweet and sour and taste this in the drinks served.
  • Be able to talk about the history of the alcohol and offer anecdotal stories about the drinks.
  • Serve the cocktails in the correct glasswear.
